Lentil Tahini Burgers


Veggie burgers are fascinating to me. In the freezer section of the grocery store, there are always many  different varieties and I have a lot of trouble differentiating them. Do I like Garden Vegetable flavor? Chipotle Black Bean? California? Or do I want the "Just Like Meat" versions of the veggie burger? As a vegetarian/vegan, I'm not used to having so many options...and let's just say, I'm not very good at making decisions! 😂 Plus, have you ever noticed that some veggie burgers come at a serious price 💲💲💲?


So, I've decided to try to tackle the veggie burger in as cheap and easy way as possible. Enter: the lentil burger.

This burger is made with green lentils, tahini, grated carrots, and breadcrumbs; it's really healthy for you! It takes about 30 minutes to make, and it has pretty good texture. I probably could've added more tahini and/or olive oil to mine (as you can probably see, they look a little dry), but I've amended that in the recipe below. Try them out and let me know what you think!


Ingredients
3/4 cup green lentils
2-3 Tbsp tahini
1 cup freshly grated carrots
1/4 cup bread crumbs
1 clove garlic, minced
small handful baby spinach
2 Tbsp olive oil
1 Tbsp lemon juice
1/2 tsp kosher salt

Instructions
In a small saucepan, add lentils and 2 cups water. Bring to a boil and reduce heat to simmer uncovered until all the water is absorbed, about 15-18 minutes. Let cool slightly while you mince the garlic and grate the carrots. Add all the ingredients to a food processor and pulse until it is mixed well (there still should be a little texture, not completely smooth). If it's too dry and won't mix, add a little bit more olive oil. If it's too wet, add more breadcrumbs. Form the mixture into patties. Heat 2 Tbsp olive oil in a large skillet over medium high heat. Once the pan is hot, add patties to the pan and cook for 3 minutes or until browned, then flip and cook for 3 more minutes on the second side or until browned. Serve on buns with toppings and condiments as you wish!
