Herb Cauliflower Rice
Moms are the best. For so many reasons. And especially when they give you recipe tips that you can use on your blog. ;)
Mom pointed me towards this perfect bag of frozen cauliflower rice that is available in the grocery store, already flavored beautifully, quick to whip up in a skillet or microwave, and not overloaded with preservatives or funky ingredients.
Cauliflower rice is a trendy alternative to carbs and a crafty way to pack more veggies in your diet. Although it doesnt have the fluff of a starchy rice, it is pretty tasty as a side or a base and the texture is lovely. If you make it from scratch in your food processor, make sure to give it a flavor boost with herbs and spices. This pre-made, working woman's dream comes in a savory herb variety that was delicious. Add some sauteed tofu or avocado, and it is perfect for a work lunch or light dinner.
I spontaneously decided to see a movie after work one night because hubby was busy. I saw Overboard - it was really cute and heartwarming! I had some cucumber and hummus right after work to tide me over through the movie, but when I got home at 9pm, I was desperately in need of something quick, delicious, and healthy to eat. Cue frozen cauliflower rice - thank god I had you waiting in the freezer!
1/2 yellow onion, diced
1/2 green pepper, chopped
Bag of frozen cauliflower rice (savory herb)
1/4 block of extra firm tofu, cubed
1 Tbsp Soy sauce (Or any sauce/flavor you like on your tofu)
Sliced cucumber for garnish and crunch
In a large skillet, saute the onion and pepper in olive oil over medium high heat until slightly soft. Add cauliflower rice and 1/4 cup of water, stir, and cover). Cook for 8min or until rice is warmed through and water is evaporated. Meanwhile, saute cubes of tofu in soy sauce, balsamic vinegar, or any flavoring your heart desires, over medium heat, stirring very frequently. Mix tofu into rice mixture and top with fresh cucumber.
